Zesty Dressing:

Directions: 

  1. In a bowl combine shrimp, 1 tsp Basil Barrel Aged Balsamic, 1 tsp Key Lime Infused Olive Oil, ½ tsp Sweet Smoked Chili Rub & Seasoning, and Mojo Citrus Seasoning Salt to taste. Let sit for 10 minutes.
  2. Combine the ingredients for the dressing in a bowl, using an immersion blender until smooth. Alternatively, a food processor or blender can be used for this step.
  3. In a skillet over medium heat, add 1 tsp Key Lime Infused Olive Oil. Once shimmering add shrimp and cook until opaque, about 2-3 minutes per side.
  4. Divide 1 cup of cooked brown rice evenly among serving bowls. Layer the diced red bell pepper, chopped red cabbage, sliced avocado, and chopped cilantro over the rice.
  5. Top each bowl with a generous drizzle of the zesty dressing and garnish with a lime wedge.
